Wow. How about a great quick daily ride that starts right downtown and gets you ~30 miles (out and back) on paved trails and gravel. This fast and flowy route isn't going to get you great elevation or technical challenges but if you just want to get out and spin the legs. it can't be beat. One cool feature is the train trestle from the "Breaking Bad" train robbery scene.

We were staying at the Marriott Residence Inn and there was a paved trail just across the street from the hotel that connected with the Rail Trail at around Zia Road.
Technical Level: Low. This is a fast and flowy gravel route. No elevation, no technical features.
Trails: Paved in the city, sandy gravel once you get past the Rabbit Road trail head
